baked with love: happy raspberry coffee cinnamon rolls

Valentine’s Day doesn’t have to mean reservations, prix-fixe menus, or dressing up. Sometimes the most meaningful way to show love is right at home — something warm in the oven with a little extra happy® baked in.

These happy raspberry coffee cinnamon rolls are a love letter in recipe form from our friend @chefsarahmick. They’re sweet but not over-the-top, simple but thoughtful, and shaped like hearts (because of course they are). With bright freeze-dried raspberries and bold happy® instant coffee, they’re perfect for Valentine’s morning, a cozy brunch, or a “just because” treat for someone you love — including yourself.

Happy Raspberry Coffee Cinnamon Rolls

Ingredients (yes, that’s really it!)

  • 1 can refrigerated cinnamon rolls (with icing)
  • 1 Tbsp freeze-dried raspberries, crushed into a fine powder
  • 1 Tbsp happy® instant coffee

Method

  1. Preheat the oven.
Preheat your oven according to the directions on the cinnamon roll packaging. Prepare a baking dish with parchment paper or light greasing so your rolls don’t stick.

  2. Separate the rolls.
Remove the cinnamon rolls from the package and gently separate them, keeping the dough intact.

  3. Create the heart shape.
Take one cinnamon roll and carefully unravel it about halfway — not all the way.
Then roll it back up toward the center from the opposite direction so the two ends meet, forming two small spirals side by side.

  4. Pinch to form a heart.
Gently pinch the loose dough at the bottom of the roll. This brings the two spirals together and creates a heart shape. Repeat with each cinnamon roll.

  5. Bake.
Place the heart-shaped rolls into your prepared baking dish, leaving a little space between each one. Bake according to the package directions until golden brown and fluffy.

  6. Make the Valentine’s icing.
While the cinnamon rolls are baking, prepare the icing. In a small bowl, combine:

    • the icing from the cinnamon roll container

    • crushed freeze-dried raspberries

    • happy instant coffee

Stir until smooth and fully blended. The icing will turn a soft pink with a rich coffee aroma — sweet, festive, and warm all at once.

  1. Ice with love.
Remove the cinnamon rolls from the oven and let them cool slightly. Spoon the coffee-raspberry icing generously over each roll, letting it drip into the swirls. Finish with a light dusting of extra crushed freeze-dried raspberries if desired.

Why Coffee Belongs in Valentine’s Day Baking

Coffee adds warmth, depth, and a little grown-up balance to Valentine’s sweets. Paired with raspberry, it keeps these cinnamon rolls from being too sugary — grounding the flavor while making the simplest of recipes feel extra thoughtful. Think of it as love, brewed in.

A Sweet Way to Say “I Love You”

Whether you’re baking for a partner, your kids, friends, or yourself, these cinnamon rolls are a reminder that love lives in small gestures. A fragrant kitchen. A cozy breakfast. A heart-shaped treat made with coffee and care.

This Valentine’s Day, skip the pressure and bake something happy.
