Valentine’s Day doesn’t have to mean reservations, prix-fixe menus, or dressing up. Sometimes the most meaningful way to show love is right at home — something warm in the oven with a little extra happy® baked in.
These happy raspberry coffee cinnamon rolls are a love letter in recipe form from our friend @chefsarahmick. They’re sweet but not over-the-top, simple but thoughtful, and shaped like hearts (because of course they are). With bright freeze-dried raspberries and bold happy® instant coffee, they’re perfect for Valentine’s morning, a cozy brunch, or a “just because” treat for someone you love — including yourself.
Happy Raspberry Coffee Cinnamon Rolls
Ingredients (yes, that’s really it!)
- 1 can refrigerated cinnamon rolls (with icing)
- 1 Tbsp freeze-dried raspberries, crushed into a fine powder
- 1 Tbsp happy® instant coffee
Method

Preheat the oven.
Preheat your oven according to the directions on the cinnamon roll packaging. Prepare a baking dish with parchment paper or light greasing so your rolls don’t stick. -
Separate the rolls.
Remove the cinnamon rolls from the package and gently separate them, keeping the dough intact. -
Create the heart shape.
Take one cinnamon roll and carefully unravel it about halfway — not all the way.
Then roll it back up toward the center from the opposite direction so the two ends meet, forming two small spirals side by side. -
Pinch to form a heart.
Gently pinch the loose dough at the bottom of the roll. This brings the two spirals together and creates a heart shape. Repeat with each cinnamon roll. -
Bake.
Place the heart-shaped rolls into your prepared baking dish, leaving a little space between each one. Bake according to the package directions until golden brown and fluffy. -
Make the Valentine’s icing.
While the cinnamon rolls are baking, prepare the icing. In a small bowl, combine: -

Stir until smooth and fully blended. The icing will turn a soft pink with a rich coffee aroma — sweet, festive, and warm all at once.

Ice with love.
Remove the cinnamon rolls from the oven and let them cool slightly. Spoon the coffee-raspberry icing generously over each roll, letting it drip into the swirls. Finish with a light dusting of extra crushed freeze-dried raspberries if desired.
